Banana Pancakes & Coffee
In a throwback to 2005, I still remember the catchiness of Jack Johnson’s “Banana Pancakes” song.
I woke up one morning and decided that I wanted banana pancakes. Have I ever made banana pancakes before? Nope. Would I like them? Maybe. My track record with bananas is wishy-washy. I love a plain ole banana, but I am EXTREMELY disapproving of banana bread! I don’t know why, but the smell of banana bread gives me a headache. I also don’t like artificial banana taste in candy or anything like that. I only like the real deal…ripe/raw.
Given that, I didn’t have a recipe and I still wanted to try to make it somewhat healthy. I found a recipe from Pinterest at The Creative Bite and liked how it turned out so I thought I would post it here.
My lovely assistant helped the entire way!
LIGHT & FLUFFY BANANA PROTEIN PANCAKES
Ingredients:
40g of protein powder (I used 1st Phorm Vanilla Ice Cream Protein Powder) - about 2 scoops
1 large, ripe banana
1/8 tsp Cinnamon
1/4 tsp Baking Powder
1/4 tsp Sea Salt
2 large eggs
Method:
In a bowl, separate out the egg white from the yolks. You will use both parts!
Beat the egg whites on high for 2 minutes until they form soft peaks.
In another bowl, add egg yolks along with the remaining ingredients and beat until smooth.
Gently fold in 1/3 of the egg white mixture into the other bowl until it’s combined. And keep folding it in until all of the egg white mixture has been combined.
Then it’s time for the skillet, and cook little pancakes for 60-90 seconds on each side.
They turned out great! Waylin and I actually ate them straight off the stove. So, we didn’t even take a picture of the final product! The website linked above for the pancakes actually has the macros listed and they are actually not bad at all if you’re trying to be healthy.
Another task Waylin has been helping with is making my coffee in the morning. ☕ I have been surviving on instant coffee since this quarantine happened. I work really late hours to get my work done and find myself working until 2 AM most nights. This means I have to wake up at 6 AM when Waylin wants to get up and Ben is already gone for work. It makes for a really, really rough morning.
I may be 32, but I am not old enough to drink “black coffee.” 😆 Give me all the sugary, creaminess of a hot cup of coffee! Especially if I am using instant coffee…that definitely needs some doctoring. 👩⚕️
She was so excited to get started making “mama’s coffee and donuts”…sadly, there were no donuts, but she always attributes donuts to coffee, which…is kind of smart! A couples of our quaratine were spent rushing over to Dunkin’ Donuts so mama could get a coffee and Waylin got some munchkin donuts. She likes to remind me all the time that we did that. I think it’s her sign to tell me she wants to do it again! 🍩
I’ve been cooking so much more since we started sheltering in place. I do have my moments where I am tired of cooking so often (and doing the dishes that accompany that), but Ben usually takes note and grabs a no-contact pizza for us! Prior to Coronavirus, Waylin’s meals took place at daycare during the day. And I would get reports that she is extremely picky and not eating anything other than the serving of fruit they provide with her lunch per day. I worried a lot about that, but ever since we’ve been on lockdown at home, she has tried SO many new foods!
I am ELATED about it! ❤ I used to pack every snack imaginable when Ben and I would leave the house near dinner time. I knew we would probably be picking up something for dinner and I knew Waylin wouldn’t eat whatever it was. I hated doing that…what kid doesn’t like chicken nuggets? I know I did myself a disservice by not feeding her ONLY what I cook for myself and Ben. I always made her her own meal, because I wanted to make sure she ACTUALLY ate. But now, I am seeing her try Chic-fil-A chicken strips, Jimmy John sandwiches, guacamole, homemade Thanksgiving turkey breast, etc. It’s really something!
She ate almost an entire HALF of my sandwich! Anyways, chalk up another positive outcome for Coronavirus! Let’s hope she’s not picky when we can roam the world freely again! 🤞 In the meantime, I’m still going to ask her to help me try new things in the kitchen! We are wanting to try our hand at bagels soon!
